Recipe: Cool Summer Heat with Fennel Oat Milk

Fennel Oat Milk

A simple, delicious drink for a hot day.  Serves 2-4

  • 1 cup of oatmeal

  • 4 cups of water

  • 1 tsp toasted fennel seeds

  • Optional: 1/2 tsp Vanilla Extract, 1 Date (pitted), pinch of Salt, soaked Cashews

To toast the fennel seeds: place seeds in a dry pan on medium heat. Move them around and toast until fragrant, about 1 minute.

Place all ingredients in a blender and blend on high speed.  Strain with a cotton cloth.  One could substitute 1/3 of the oats with soaked cashews for a creamier texture. Serve room temperature.
